ORANGE MANDARIN TOSSED SALAD

Ingredients:
1 head of romaine lettuce, torn into bite size pieces
2 C celery, thin angle slice
2 Tbsp. fresh parsley, chopped (I use more)
2 or 3 green onions, sliced (use tops and all)
2 (11oz) cans mandarin oranges, drained
1/2 C silivered almonds
1/4 C butter
2 Tbsp sugar

Dressing:
1/2 C Salad oil
1/4 C Sugar
1/4 C tarragon vinegar
1/2 tsp Tabasco sauce
1 tsp salt
pepper

First, melt butter in small heavy pan. Add sugar and stir until sugar is dissolved over low heat. Add almonds and stir until golden. Pour out on plate to cool. Combine lettuce, celery, parsley, green onions and mandarin oranges in salad bowel.

Combine dressing ingredients, mixing well. Right before serving toss with salad ingredients. Sprinkle cooled, toasted almonds over top.
