Chicken Puu Puu
2 Chicken breasts - skinless, boneless, cut into 1 inch cube (I use twice this much with the same amount of marinade)
½ lb fresh mushrooms
½ c. oil (I use ¼ c.)
¼ c. soy sauce (I sue ¼ c)
2 tbsp vinegar
1 tbsp honey
1 garlic clove, finely chopped (I use two)
Combine the oil, soy sauce vinegar, honey and garlic. Add the chicken and the mushrooms, cover and marinate for 2-3 hours at room temperature or overnight in the refrigerator. Drain the chicken and mushrooms, and thread them alternately onto 10-12 small bamboo skewers. Broil over hot grill about 4 inches from coals for three to four minutes on each side.
